According to the traditional
production, mozzarella is packaged and sealed with its water
for transportation.
This operation is necessary for the preservation of the product
itself.
Then the mozzarella is packaged in polystyrene boxes, that contain
on average 4 Kg of product, but the total weight becomes on average
8 Kg.
Supposing we send mozzarella in U.S.A., the transport cost is
on average 1.50 per Kilo, so we have:
product net weight Kg 100
total weight of the package Kg 200
transport cost 1.50 x Kg 200 = 300
According to Only Milk method, we can obtain 120 Kg of mozzarella,
transforming 100Kg of semifinished product.
To send the semifinished product water is not necessary because
it's vacuum packaged in blocks of about 15 Kg.
For example for a delivery in U.S.A. we always have:
product net weight Kg 83
total weight of the package Kg 83
transport cost 1.50 x Kg 83 = 124.50
Saving on the transport cost: 175.5 that is 58%.
